Brigitte Tee is the UK’s leading expert on edible mushrooms, and shares her knowledge through Seminars offered all year round, conducting highly informative walks through the New Forest. The programme is structured around the dormant and the growth periods.

Between May and December, the growing season, the programme will include a guided foraging excursion.
From January to April, the dormant period for growth, the focus will be on in-depth study and the development of gourmet cooking skills, with an informative walk through the forest, an optional part of the day

For those who want to make a two-day break of it and stay over, our excellent Guesthouse is well known and gives you an opportunity of informal mushroom and other good conversations, perhaps a pub lunch and a forage of your own.

Seminar Programme
May to December

10.00 am.
All participants will meet at Gorse Meadow for coffee and initial Welcome and distribution of the Course Book which is a pocket "Field Guide to Mushrooms of Britain and Europe."

We then proceed quickly to a talk on the environment generally, the same with regard to mushrooms in particular, how to cull them without killing them off, some myths and ignorance with regard to them, how to protect our rights to gather them, the identification of about eight distinct species that are easy to recognise and will not be confused with any others and some or all of which will be growing throughout the year; how to conserve them, how to dry or freeze them and finally a few of the many ways to cook them.

Mid Day:- A Light Lunch and drinks will be served.
We will proceed to the selected foraging areas in groups of four to eight with a leader who will be Mrs. Tee herself or one of the other members of the Staff of "Mrs. Tee's Wild Mushrooms". Participants will be told which of the Identified Mushrooms are growing there and you will begiven whatever degree of assistance you require in finding them and harvesting them in a proper manner.

4.00 p.m. or dusk    Meet at car park where all mushrooms will be pooled and examined and inedible and poisonous ones disposed.
There will be a review of what the foragers have or have not learned.
Although we will retain the mushrooms picked on the forage, every member of the party will leave with half a pound of Mrs. Tee's Mixed Wild and Exotic Mushrooms.

Seminar Programme
January to the end of April

 

10.00 am.

A lecture will be given followed by a cookery demonstration prior to lunch using wild and exotic mushrooms, which we import throughout the year.

Mid Day:- Lunch will be served including the mushrooms prepared during the morning.


P.M. Delegates will be taken into the forest, although during this dormant period, as nothing of any consequence is growing in the New Forest, there will be no forage. However, there is still alot to see and learn, and the group leader will have much to teach about the forest, and mushroom habitats.

For those unable to take advantage of the above offers, particularly Chefs and Hotel and Restaurant Staff, we have special rates OR we are prepared to give the Seminar, including prepping, storing, cooking, preserving etc, etc at your premises at times to be arranged on dates of your choosing, subject to prior engagements, at a fee of £15.00 per person, with a minimum of four persons per session, plus any out of pocket expenses, to be agreed.
