Brigitte Tee has a vast knowledge of mushrooms and local produce and regularly holds seminars and team building exercises for chefs and their brigades at her beautiful New Forest home - Gorsemeadow.

New Forest Mushrooms

This one-day course enables chefs to learn invaluable information about the identification, seasonality, preparation and use of both wild and cultivated mushrooms that they can take back and use in their own kitchens. The day includes a guided excursion into the New Forest with the expert herself, to forage for and pick their own mushrooms. Importantly, delegates will also be taught which mushrooms are not safe to cook and eat.

*Days include a delicious home-cooked lunch with wine, where guests can relax and enjoy listening to Mrs Tee’s many anecdotes – from famous chefs and celebrities she has taken foraging in the New Forest, to the rare and wonderful mushrooms she has picked around the world over her career spanning 35-years. Guests welcome the opportunity to ask questions and often share their own culinary stories and experiences.

For overnight guests, accommodation is provided at Gorsemeadow’s homely Bed and Breakfast, set in 16 acres of stunning countryside and a 30 minute stroll from the picturesque market town of Lymington. Guests can also enjoy delicious gourmet evening meals prepared by Brigitte and her team using local, seasonal produce.
